Abstract

The diet of the host plays a pivotal role in the development and progression of dental caries. Mainly sugars determine if a diet is cariogenic, because certain bacteria are able to ferment these sugars into acids. Lemonades or syrups can be sources of sugar. Several types of lemonade are commercially available: Lemonades containing fruit sugars and added sugars, lemonades containing fruit sugars and sugar substitutes and lemonades containing only sugar substitutes. Purpose of the study: To improve nutrition advice given by dental professionals to parents and children. Research questions: Are there any differences in cariogenic potential of S. mutans between a lemonade containing fruit sugars and added sugars, a lemonade containing fruit sugars and sugar substitutes and a lemonade containing only sugar substitutes. And how much does the dilution factor of the lemonade in water influence the cariogenic potential of S. mutans? Methods: The study is experimental and in vitro. The population consisted of 66 samples produced from bovine teeth. Also cultivated S. mutans bacteria and three different lemonades in three different concentrations were needed. The samples were inoculated with S. mutans, because these bacteria species play an important role in dental caries by fermenting sugars. After inoculation, the samples had been kept in BMM, PBS or one of the nine different lemonade-solutions for ten days. The samples were analysed on demineralisation and biofilm size by HK-measurements, QLF�camera pictures and OCT-measurements before and after the intervention. The results of these measurements were processed in a statistical data analysis. Results: A significant diminution in HK after the intervention, the formation of a biofilm and a loss in surface enamel was found in all lemonade groups. Conclusion: The study concluded that there are almost no differences in the cariogenic potential of S. mutans between the included lemonades. The dilution factor of the lemonade in water has little influence on the cariogenic potential of S. mutans.
