Abstract

There are various factors that can influence the perception of taste, such as olfactory, vision, temperature and sound. Only since a few years studies have been conducted on the influence of background noise on taste perception of sweet and salt flavours. This study will contribute to existing research by revealing the effect of background noise on the taste perception of sour and bitter. In order to relate to previous studies, also the effect of background noise on the taste perception of sweet will be studied. Purpose: The ambiance in an airplane is influenced for a large part by environmental noise. Especially in long flights, this noise has a large effect on the feeling of comfort that passengers and personnel may experience. If background noise indeed has a significant effect on taste for sour and bitter, there might be implications for the catering on-board. Methods: The research sample in this study consisted of 45 dentistry and dental hygiene students of the Centrum voor Tandheelkunde en Mondzorgkunde (CTM), who were randomly selected from the student population. Subjects that were suffering a cold were excluded from the study. The 45 selected participants were divided at random in three different groups prior to the study. Each group, consisting of 15 people, got to taste one specific flavour: sour, bitter or sweet. The study was situated in a soundproof room. During the tasting, all subjects were wearing Noise Cancelling headphones, which played white noise. There were three different taste moments for each participant. At each of the three moments the participants were given a cube of gelatine while exposed to a different sound situation. Each time, the participants were asked to give their rating on the basis of a VAS score. All of the ratings were noted in a table and documented in Excel. The data was then converted to SPSS, after which it was analysed with the two-way repeated measures anova. The scores for the appreciation of taste were compared for the different sound intensities within the three different groups. Results and conclusion: This study showed no significant effect for sound intensity and for the interaction between sound intensity and taste. This means that background noise does not significantly influence the perception of taste of sour and bitter flavours. Also the taste perception of sweet is not influenced by background noise according to the results of this study. Therefore, the results of this study are not in line with previous literature. This means that there can not be made a recommendation for the catering of airline companies.
