Abstract

Background: In this control study the influence of a tongue coating on the perception of the taste salt was investigated. The underlying question is whether salt intake by elderly people can be reduced by removing their tongue coating. Material and methods: The tests were performed on 70 subjects, of which 28 males and 42 women, in the age of 18 to 32 years old. A picture was taken of the tongue of every subject to determine the thickness of their tongue coating with the Winkel tongue coating index (WTCI). Subsequently, each subject was offered four identical cookies with a low or high concentration of salt and was asked to mark their salt perception and appreciation on a VAS scale after eating each cookie. Before the last two cookies were offered, the subject’s tongue coating was removed with a tongue scraper and complete removal was checked with a second picture. Results: There were no significant differences in the perception of salt before and after removal of the tongue coating when cookies with a low salt concentration were eaten. However, although not significant, the change in salt perception noticed by subjects with a thick tongue coating after tongue scraping seemed bigger than the change noticed by those with a thin tongue coating. The results of the tests with the cookies containing a high salt concentration were not useable as statistical analysis showed too much variation in the VAS scores. No difference in the appreciation of salt was found before and after scraping of the tongue when cookies with a low and high concentration were eaten. Conclusions: Removal of a thin tongue coating does not influence the taste perception of salt. Removal of a thick coating seems to have a small influence on the salt perception. Furthermore, removal of the tongue coating does not influence the appreciation of the taste salt.
